Mushroom Pepper Fry
Mushroom Pepper Fry
(here i have used Button mushroom)
you can use Oyster mushroom...

Oyster Mushroom is very demand in market...
Oyster Mushroom - 1 cup chopped
Whole Pepper - 1 tbsp
Capsicum - 1/2 cut lengthwise
Ginger Garlic Paste - 1 tsp
Big Onion - 1 cut lengthwise
Coriander powder - 1/2 tsp
Red Chilli powder - 1/2 tsp
Garam Masala powder - 1/4 tsp
Coriander Leaves - 2 tsp finely chopped
Salt - to taste
To Temper:
Fennel Seeds - 1/2 tsp
Curry Leaves - a small sprig
Red Chilli - 1 whole
Method:
- Dry roast whole pepper for 2-3mins or till nice aroma comes.Powder it coarsely,Set aside.Heat oil in a pan - add the items listed under 'to temper' let it splutter.

- Then add onion,ginger garlic paste and saute till golden brown.Add capsicum and saute for few mins until it shrinks a bit.

- Add mushrooms and saute well.It will start leaving water , then add pepper powder,coriander,red chilli and garam masala powders and mix well.Cook in low medium flame for 5-7mins till mushrooms turn soft and the masalas come together.Add required salt, give a quick mix garnish with coriander leaves and switch off.

Grated Coconut - 1 tbsp
Curry Leaves - a small sprig
Big Onion - 1 chopped finely
Oil - 1 tbsp
Salt - to taste
For the marination:
Ginger Garlic Paste - 1 heaped tsp
Red Chilli Powder - 1/2 tsp
Coriander Powder - 1 tsp
Garam Masala Powder - 1 tsp
Roasted Jeera Powder - 1 tsp
Method:
- Clean mushroom and chop them as shown below, you can cut each mushroom into 2-3 slices depends on how big it is.In a mixing bowl add all the ingredients listed under 'for the marinade' and give a nice toss so that the masalas are evenly coated.Don't add water.

- Leave it to marinade for 30mins, mushroom will leave out water just set it aside.Now in a pan dry roast fennel seeds till slightly browned then grind it to a coarse powder.

- In a pan heat oil - add fennel seeds powder and curry leaves saute for a minute.Then add onion and saute till translucent.Then add the marinated mushrooms.Cook in medium flame for few mins.Add required salt.

- Cook till it becomes more thicl by now mushrooms will be cooked.Now add coconut and saute for few mins until it is a thick thokku.

Ingredients:
Basmati Rice - 1 cup
Oil / Ghee - 2 tblspn
Fennel Seeds / Sombu / Saunf - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Cinnamon / Pattai - 2 cm piece
Cardamom / Yelakai - 3
Cloves / Krambu - 2
Bay Leaf - 1
Black Stone Flower / Kal Paasi -1 piece
Mace - 1
Onion - 1 large sliced thinly
Ginger Garlic Paste - 1 tblspn
Green Chillies - 3 to 4 slit
Coriander leaves - 1/4 cup chopped finely
Mint Leaves - 1/4 cup chopped finely
Mushrooms - 200 grams chopped
Coconut Milk - 1 cup
Water - 1/2 cup
Salt to taste
Method:

Method:
Wash and soak rice for 30 mins.
Heat oil or ghee in a pan and add in all whole spices. Let them sizzle for a min.
Add in onions and saute till golden brown.
Add in green chillies and ginger garlic paste and saute for a min.
Add in mushrooms and toss well in oil till it is cooked and got nice colour.
Add in coriander, mint leaves and mix well.
Now add in rice and toss well in the oil.
Now add in coconut milk and water. Mix well. Season with salt.
Cover with a lid and simmer to the lowest possible. Cook for 15 mins. turn off the heat and fluff the rice with a fork. cover with a lid and let it sit for 15 mins.
Now serve.

Mushroom Pulao Recipe in Goan style
Step by Step Mushroom Pulao Recipe:
- Clean, wash and soak the rice for 15-20 mins. When the rice is getting soaked, chop all the veggies. Clean and chop the mushrooms too.
- Take all the whole garam masala and keep it aside.
- In a pressure cooker, heat oil. Add the whole garam masala and saute till they are fragrant. Add the onions and saute the onions till translucent or light brown.
- Add the ginger-garlic paste and saute till the raw aroma of the ginger-garlic disappears.
- Now add the chopped tomatoes, potatoes and mushrooms. Saute for 8-10 minutes till the mushrooms are half cooked. Keep on stirring at intervals.
- Add the soaked rice and the chopped green chili.
- Saute the rice for 1 to 2 minutes stirring gently on a low flame.
- Add the coconut milk and water, along with salt and pressure cook the rice for 2 to 3 whistles. Serve the mushroom pulao with sliced onions and lime. You could also have mushroom pulao with onion-tomato raita and roasted papad.
