Mushroom Gravy  காளான் குழம்பு

ingredients :
  • 150 gms mushroom
  • 2 onions
  • 1 tomato
  • 1/2 tsp turmeric powder
  • 2 tsp red chilli powder
  • 1 tsp garam masala
  • 1 tbsp ginger-garlic paste
  • salt to taste
  • 1 tsp mustard seeds
  • 1 tbsp chopped coriander
  • 5 curry leaves
Method :
  • Cut and wash the mushrooms. Heat oil in a kadhai. Tamper mustard seeds and curry leaves. Add sliced onions and ginger-garlic paste. Saute a while and add tomatoes.
  • Add mushroom, turmeric powder, red chilli powder and garam masala. Mix all and add salt to taste. Add water if needed and cook it covered for 10-15 mins. Garnish with chopped coriander. It tastes like non veg dish. Serve hot with steamed rice or chapati.

செய்முறை:
வெட்டி காளான்கள் கழுவ வேண்டும். ஒரு Kadai கடாயில் எண்ணெய். நிதானத்தை கடுகு மற்றும் கறிவேப்பிலை. வெட்டப்படுகின்றன வெங்காயம் மற்றும் இஞ்சி பூண்டு விழுது சேர்க்கவும். சிறிது சமைக்கவும் மற்றும் தக்காளி சேர்த்து.
காளான், மஞ்சள் தூள், மிளகாய் தூள் மற்றும் கரம் மசாலா சேர்க்கவும். அனைத்து கலந்து மற்றும் சுவை உப்பு சேர்க்கவும். தேவைப்பட்டால் தண்ணீர் சேர்த்து அதை 10-15 நிமிடங்கள் மூடப்பட்டிருக்கும் சமைக்க. துண்டாக்கப்பட்ட கொத்தமல்லி அழகுபடுத்த. இது அல்லாத சைவ உணவை சுவை. வேகவைத்த அரிசி அல்லது சப்பாத்தி கொண்டு சூடாக பரிமாறவும்.

Mushroom Gravy



Ingredients

1 tablespoon olive oil
1/2 cup chopped onion 
1 1/2 tablespoons chopped fresh sage
1/4 teaspoon salt
(8-ounce) package presliced mushrooms
1/4 cup Madeira wine or dry sherry
3 cups Roasted Chicken Stock 
1 1/2 tablespoons all-purpose flour 
2 tablespoons water
2 tablespoons butter 
1/8 teaspoon freshly ground black pepper


Preparation

1. Heat oil in a nonstick skillet over medium-high heat. Add onion to pan; sauté 1 minute. Add sage, salt, and mushrooms; sauté 11 minutes or until mushrooms are browned. Add wine; cook 30 seconds or until liquid almost evaporates. Stir in Roasted Chicken Stock. Boil; cook until reduced to 2 cups (about 14 minutes).
2. Combine flour and water in a bowl, stirring until smooth. Add flour mixture to pan; return to a boil. Reduce heat; simmer 2 minutes or until slightly thickened, stirring occasionally. Remove from heat. Stir in butter, 1 tablespoon at a time, stirring until butter melts. Stir in pepper.

Note:


Add 1 tablespoon flour to the slurry for a thicker gravy. You can substitute fat-free, lower-sodium chicken broth for the Roasted Chicken Stock—but if you do, decrease the salt to 1/8 teaspoon or add none at all.

INGREDIENTS

    • 1 pound mixed fresh white and exotic mushrooms such as cremini, oyster, or shiitake (discard shiitake stems)
    • 4 large garlic cloves, minced
    • 2 tablespoons unsalted butter
    • 1 onion, chopped fine
    • 1 tablespoon soy sauce
    • 1/2 cup dry red wine
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon cornstarch dissolved in 1 1/2 cups cold water
    • 1/2 teaspoon sugar
    • 2 tablespoons finely chopped fresh parsley leaves
  1. PREPARATION

      1. Slice mushrooms. In a 10-inch heavy non-stick skillet cook garlic in butter over moderately low heat, stirring, until pale golden. Add onion and cook, stirring, until softened. Add mushrooms and soy sauce and sauté mixture over moderately high heat, stirring, until liquid mushrooms give off is evaporated and mushrooms begin to brown.
      2. Add wine and vinegar and boil until liquid is evaporated. Stir cornstarch mixture and add to skillet with sugar. Bring mixture to a boil, stirring, and simmer 2 minutes. Stir in parsley and season gravy with salt and pepper. Gravy may be made 1 day ahead and chilled, covered. When reheating gravy, add water if necessary to thin to desired consistency.
      3. Serve gravy spooned over baked or mashed potatoes and/or steak or chicken.

   Ingredients needed

   Mushroom -200 grams
   Potato medium size -1
   Onion (cut lengthwise) -3/4 cup
   Green chillies- 2 slit
   Ginger garlic paste -1/2 tsp
   Tomato -1/2 cup

   Turmeric powder -1/4 tsp
   Sambar powder -2 1/2 tsp

   For grinding (masala paste)

   Pearl onions/baby onions- 7-9
   Grated coconut - 1/4 cup
   Fennel seeds/ Sombu - 1 tsp
   Whole black pepper - 1 tsp

   For the seasoning

   Oil -2 -2 1/2 tbsp
   Cinnamon -1 inch piece
   Cloves - 2
   Curry leaves- few

Preparation

Grind the masala raw and keep it ready.

Clean and cut mushrooms into 2 pieces.

Cut onion lengthwise.

Method
Heat oil in a kadai, add the ingredients mentioned under seasoning, then add onions, green chilli and saute until onions turn transparent.


Add ginger-garlic paste and saute for a few more seconds.

Add chopped tomatoes, turmeric powder, salt needed and sambar powder. Cook until tomatoes becomes mushy.


Then add cubed potatoes and cook for a few minutes.


How to prepare kalan kulambu


Once the potatoes are half done, add the mushrooms and cook covered for a few minutes.


How to make mushroom Kuzhambu


When the mushrooms are almost done, add the ground paste, mix well and cook for a few more minutes until the raw flavor of the paste goes.




Once the masala is well blended with the mushrooms and potatoes, add a cup of water and boil well on medium flame for 5-6 minutes. Then switch off the flame and garnish with coriander leaves. Check for salt.




Serve hot with chapati, naan, paratha or rice.
